This paper lists the different species of edible Haliotidae from the West Coast of America with their local names, their biology and distribution and their use by native Americans in the past. The history of the abalone industry in this part of the world is described, with the role of Chinese and Japanese immigrants in diving these snails. The danger of extinction of these snails is highlighted with the efforts to prevent this, exemplified by the sustainable mariculture of Haliotis rufescens by the Monterey Abalone Company. Finally, the culinary history of the abalone in California is given with a famous recipe for preparing abalones.
